Professional uses a PU rocker bottom; XP 2.0 uses a rubber outsole that Dansko describes as slip resistant for dry, wet and oily/wet surfaces. XP also has a removable footbed and lightweight EVA midsole. Compare it first if your job requires slip-resistant footwear or you use your own insert.
Professional remains an option for the classic clog shape and rocker sole. Do not pick a winner for comfort before trying them: check toe room, instep pressure and heel movement in each pair with your usual socks.

Dansko identifies waterproof leather on selected XP finishes, including Black Waterproof Pull Up. That is not a waterproof claim for every XP 2.0.
